Makes 1 dozen muffins ~ Prep time: 15 minutes ~ Cook time: 13-15 minutes.

Ingredients:
1 ¾ cups of all-purpose flour
⅓ cup packed brown sugar
2 tablespoons of unsweetened cocoa powder
2 ½ teaspoons of baking powder
1 ½ teaspoons ground cinnamon
¼ teaspoon salt
1 cup milk
1 egg, lightly beaten
¼ cup applesauce
2 tablespoons butter, melted
⅔ cup mini semisweet chocolate chips
1. Preheat oven to 400°F. Spray 12 standard muffin pan with non-stick cooking spray or line with cupcake wrappers.
2. Combine flour, brown sugar, cocoa, baking powder, cinnamon, and salt together in a medium mixing bowl; mix well.
3. In a medium bowl, whisk together milk, butter, (if, when adding butter, it re-solidifies a little, put combined milk and butter in microwave and heat for about 10 seconds), applesauce, vanilla, and egg until blended.
4. Combine the two mixes and stir until blended. Add the chocolate chips. Spoon batter into prepared muffin pan.
5. Bake for 13-15 minutes or until the toothpick inserted into centers comes out clean. Cool in pan for 5 minutes; remove to wire racks to cool completely.
